In New Orleans and in the bayou country of the southernmost half of Louisiana there is one thing that matters to every visitors and it is the taste of their foods. As history tells us that it their dishes are influenced by different culture dishes style. Of course, it won’t stay as long as today if they were not able to master the way of cooking their delicious dishes. Well, the most common ingredient is the crawfish meat. It is because they are known to be abundant source of sea foods especially crawfishes. In fact, it is the famous ingredient of the famous recipe called crawfish etouffee.

The etouffee means smothered or suffocated. However, it is a Cajun dish served with shellfish or chicken over rice and is similar to gumbo. It is usually cooked with a roux as a base. A roux is a mixture of flour and fat cooked together and used as a thickening. The crawfish etouffee can be with dark brown-red roux or a blonde roux. The other way could be cooked simply with onions cooked down in butter. Well, though some debates about using a roux or not I can say that it depends on what best to your taste.

Once you have decided which of the two you will like to try, here are the ingredients you should gather.

* 6 tbsp butter
* 4 tbsp flour
* 2 cups onions, chopped
* 1/2 cup bell pepper, chopped
* 1/2 cup celery, chopped
* 6 cloves garlic, minced
* 2 tbsp dry sherry
* 4 cups crawfish stock
* 2 bay leaves
* 4 sprigs fresh thyme
* 1 1/2 tsp salt
* 1 tsp black pepper
* 1/2 tsp crushed red pepper
* 4 dashes of your favorite hot sauce
* 2 tsp Worcestershire sauce
* 2 lbs Louisiana crawfish tails
* 1/2 lemon, juiced
* 1 cup green onions, chopped
* 1/4 cup chopped parsley
* steamed white rice

Equipments:
Knife
Chopping board
Large pot
Stove
Saucepan
Wooden spatula

Cooking crawfish etouffee is really exciting and it gets easier to cook this if you have the ingredients and equipments. Then follow the directions thoroughly.

1. Bring your large pot to medium heat to melt the butter.
2. Whisk in flour; stir it constantly until medium or golden brown roux is achieved.
3. Then, put onion, bell pepper, celery and garlic to the roux.
4. Sauté the vegetables for 5-7 minutes till it become soft and translucent.
5. Put sherry to vegetables while scraping the bottom of the pan to loosen any bits stuck to the bottom of the pan.
6. Add stock, bay leaves, and thyme, salt, black pepper, crushed red pepper, hot sauce, and Worcestershire and stir well.
7. Cover, reduce heat, and simmer for 30 minutes, stirring occasionally.
8. Add crawfish tails, lemon juice, green onions and parsley, then stir, cover, simmer 5 more minutes.
9. Adjust salt, black pepper and hot sauce to taste.
10. Serve in a soup bowl over steamed white rice.

It is absolutely the taste you are looking for. Well, you have it right in your table after cooking it. Or else, find it in every Louisiana’s restaurant. Like I said it is very famous crawfish recipe.

Shepherd’s pie is a delicious, hearty, and versatile recipe that the entire family is sure to love. It is a versatile recipe, because you can use any vegetable that you like in the pie, and you can use leftover meat, vegetables, and potatoes. It is a tasty way to remix leftovers. The dish is just as tasty when all the ingredient are cooked up fresh for the recipe.

Ingredients:

1 tablespoon olive oil

2 pounds ground beef or ground turkey

1 medium yellow onion, diced

1 10.75 ounce can golden mushroom soup

½ cup water

1 teaspoon salt

1 teaspoon pepper

2 tablespoons Worcestershire sauce

2 cups frozen mixed vegetables (or any other frozen vegetable that you like)

2 pounds potatoes, cubed and boiled

¼ cup butter or margarine

½ cup milk

1 teaspoon salt

1/2 teaspoon pepper

¼ cup Parmesan cheese, either shredded or grated

_________________________________________________________________

1. Heat the oven to 375°F. Spray a 9 x 13 inch baking dish with non-stick cooking spray. Set aside.

2. Wash and cut the potatoes into 1 inch cubes. Put the cubed potatoes into a large pot of water, making sure that the potatoes are completely covered with water. Add a small handful of Kosher salt to the potatoes and put the pot on the stove, with the burner turned to high heat. Bring the water to a rolling boil, and boil the potatoes for 20 minutes or until they are tender.

3. While the potatoes are boiling, put the olive oil into a large skillet and allow the pan to get hot. Once the pan is hot, add the ground meat, the diced onion and 1 teaspoon each of salt and pepper. Cook until the meat is browned and the onions are translucent, approximately 10 to 12 minutes. Then add the Worcestershire sauce, golden mushroom soup, water, and frozen vegetables. Stir all of the ingredients together until everything is coated with the mushroom soup. Let it continue to set on the burner with the heat reduced to low.

4. While the meat mixture simmers on the stove, take the potatoes off the stove and drain them. Once they are drained, put them into a large bowl, add the butter and milk to the potatoes and mash the potatoes with either a potato ricer or an electric mixer. Blend the potatoes until relatively smooth (depending on your preference for texture). Add 1 teaspoon salt and ½ teaspoon pepper, and stir the potatoes to blend in the salt and pepper.

5. Remove the meat mixture from the stove and spoon the mixture into the prepared baking dish, and spread it out to an even level. Top the meat mixture with the mashed potatoes. Sprinkle the Parmesan cheese over the top of the potatoes.

6. Put the filled baking dish into the oven and bake for 30 minutes.

7. Remove the shepherd’s pie from the oven, loosely cover with tin foil and allow to cool for 10 minutes prior to dishing it up.

8. Serve and enjoy!

There you have it, a delicious and hearty meal. You could serve it with a salad if you wish, or by itself. Either way, it’s guaranteed to be a hit with the family!

Ingredients for Thai crispy – fried noodles recipe:

100 g (3 1/2 oz.) rice vermicelli
2 cups (500ml/16 fl oz.) oil, for frying
100 g (3 1/2 oz.) deep-fried tofu puffs, cut into strips
2 cloves garlic, finely chopped
5cm (2 inch) piece fresh ginger, grated
150 g (5 oz.) pork mince
100 g (3 1/2 oz.) raw prawn meat, finely chopped
1 tablespoon white vinegar
2 tablespoons fish sauce
2 tablespoons soft brown sugar
2 tablespoons chili sauce
1teaspoon chopped red chillies
2 small knobs pickled garlic, chopped
1/4 bunch fresh garlic chives, chopped
1 cup (30 g/1 oz.) coriander leaves

Directions for Thai crispy – fried noodles recipe:

1. Place the vermicelli in a bowl of hot water for 1 minute; drain and allow to dry for 20 minutes. Heat the oil in a wok, add the tofu in two batches and cook for 1 minute or until golden and crisp. Remove from the wok and leave to drain.

2. Add the completely dry vermicelli to the oil in several batches, cooking for 10 seconds or until puffed and crisp. Remove immediately to prevent the vermicelli absorbing too much oil. Drain on paper towels and cool.

3. Drain all but 1 tablespoon of the oil from the wok. Reheat the wok over high heat and add the garlic, ginger, mince and prawn meat. Stir-fry for
2 minutes or until golden brown. Add the vinegar, fish sauce, brown sugar, chili sauce and chillies and stir until the mixture comes to the boil.

4. Just before serving, add the noodles and tofu to the wok and toss thoroughly. Quickly toss through the pickled garlic, the coriander and the chives and serve immediately.

Belly pork is so under-rated and for the life of me I can’t see why. Yes I agree it does contain a lot of fat but at the end of the day fat is flavor and pork does need to have some flavor to it. To top it all off, belly pork is so cheap although you may have to go to your butcher rather than the supermarket. Maybe the supermarket will start to stock it once the word get round about how good this cut of the pig really is?

My recipe suggestion for this article is going to involve slow cooking in the smoker over a water bath followed by a light grilling to crisp up the skin for the most perfect crackling. You’re going to love it!

Before I go any further I have to give full credit to Raymond Blanc a French chef who I saw doing something similar in his Oxfordshire kitchen (albeit a lot more elaborate) and it was whilst watching him that I thought this would appeal to the outdoor cooking enthusiast so I just had to make an adaptation.

The flavor for this pork belly comes a wonderful mix of spices and herbs from the Far East and they are coated onto the belly pork. Here’s the mix

  • 1 stalk lemongrass, bruised, halved lengthways, finely chopped
  • ¼ teaspoon freshly ground white pepper
  • ¼ teaspoon Chinese five-spice powder
  • 4 garlic cloves, crushed
  • 1inch fresh ginger, peeled, chopped
  • 2 red chillies, seeds and pith removed, finely chopped
  • 1 teaspoon sea salt

There’s enough mix to cover about 1kg of belly pork so apply the spice mix to the belly pork and rub it in on the flesh side before covering with stretch wrap. Put the pork in the refrigerator overnight to allow for the spices to work their magic. (If you can’t wait for overnight then you can shorten this marinade time to two or three hours but the longer the better.

The next morning it’s time to place the pork in the smoker for three hours at 110°C or 225°F skin side up with a water bath underneath. Make sure that you pre-warm the water and don’t be tempted to put any wood chips on the fire, moist indirect cooking is enough for this recipe, there’ll be flavor subtly added by using a smoker (rather than an oven) and this recipe doesn’t need anything else..

When the three hours is up remove the side of belly pork from the smoker, turn it over so that it’s skin side down and slap it on the grill to cook until the skin goes lovely and crisp which should take about 15 minutes over high heat.

This is not a dish for delicate slices, it’s about cutting up into nice thick portions. I like to serve my belly pork on a bed of leaves, place the pork hunk on top (skin side up so that the crackled skin is on view) and then pour over a sprinkling of soy sauce and sesame oil just to add a nice sheen to the crackling and to lift the flavor further.

Butterscotch Haystacks are so fun and easy to make, and only require a few ingredients. You’ll need butterscotch morsels, creamy peanut butter, miniature marshmallows, and chow mein noodles. Simply melt down the butterscotch in a microwave and stir in the peanut butter until blended completely. Add in the marshmallows and chow mein noodles, stirring gently as to not break the noodles. On a wax or freezer paper lined sheet pan, arrange the mixture into little haystacks and refrigerate, then serve.

<strong>4. Lollie Brownie Cake</strong>s

This cake is made just like brownies, except on a larger scale. Just bake up some brownies, throwing in any nuts you wish. Let kids select the miniature chocolate bars and simply melt them down in a microwave. Drizzle over your brownie cake, and top with bits of remaining miniature chocolate bars. This recipe also works on a smaller scale, which is great for parties as each child can create their own custom cake using mini chocolate bars of their choice

<strong>5. Sweet Desert Pizza</strong>!

For a sweet but healthy children’s cake try Dessert Pizza. This recipe calls for sugar cookie dough crust, fresh fruits, and softened cream cheese. Bake up your cookie dough in a circular pizza pan. Mix up the cream cheese with some confectioner’s sugar, and then spread the mixture onto your “pizza pie.” Kids have a blast decorating this cake like a real pizza. Select fresh fruits like pineapples, oranges, peach slices, blueberries, raspberries, and strawberry halves. Slice the cake into wedges and serve.
