Delicious, and easy-to-make, this simplified version of the classic French dish is fun to make, visually pleasing and a joy to eat. Chicken breasts are flattened and topped with Swiss cheese and ham. The breasts are tucked in over the ham and cheese and secured. The chicken is browned and then sautéed over low heat in dry white wine and broth. A sauce is created using the reduced wine with a cornstarch and heavy cream thickening mixture. When the sauce has heated through and reached the desired consistency, it is poured over the cooked meat and the dish is served.

The best choice for this dish is fresh, moist, plump chicken breasts. The flattened meat, if done properly with a larger chicken breast, will nicely fold back over the ham and cheese and form a nice, tight cocoon. The ham heats through and the cheese melts inside the secured pocket. The sauce should be smooth and can be run through a light mesh to insure no large particles. You could substitute half-and-half for the heavy cream, if necessary.

Easy Chicken Cordon Bleu

Ingredients:

6 Skinless, Boneless Chicken Breast Halves
6 slices Fresh Swiss Cheese
6 slices Virginia-Baked Ham, or other ham sliced thinly
3 tablespoons All-Purpose Flour
1 teaspoon Paprika
6 tablespoons Unsalted Butter
1/2 cup Dry White Wine
1 teaspoon Chicken Bouillon Granules
1 tablespoon Cornstarch
1 cup Heavy Whipping Cream

Preparation:

1. The breasts should be pounded flat with a meat mallet to a thickness of 1/4″.
2. Place a Swiss cheese slice on each chicken breast, leaving 1/2″ of the edge exposed. Place a slice of ham on top of the cheese.
3. Fold the edges of the breast over the ham and cheese and secure with toothpicks.
4. Combine flour and paprika in a shallow bowl.
5. Coat the meat in the flour mixture.
6. In a large sauté pan, heat butter over medium high heat.
7. Cook chicken until brown, turn and cook on the other side.
8. Add dry white wine and chicken bouillon.
9. Reduce heat to low, cover sauté pan and cook 30 minutes.
10. Transfer chicken to a warm serving platter, and remove toothpicks.
11. In a small bowl, combine the cornstarch with the whipping cream, stir slowly into the sauté pan.
12. Simmer until sauce thickens, and spoon over chicken. Serve warm.

½ cup basil chiffonade

  1. Pulse the onions and the carrots in the food processor.
  2. Heat the olive oil and sauté the onions, garlic and carrots on high heat until golden brown.
  3. Crush the tomatoes with your hands and add to the mixture.
  4. Add the red wine and salt.
  5. Simmer for 20-30 minutes or until reduced by 1/3.
  6. Add the tomato paste and cook for another 5 minute, stirring frequently.
  7. Add the basil leaves and cook for another 5 minutes, stirring frequently. For a smoother consistency, pulse the sauce in the food processor.

To Serve:

1 to 1½ cups spaghetti squash

1-2 oz Parmesan, Asiago or Romano cheese, shredded

1 tablespoon Italian flat-leaf parsley, minced

  1. Arrange spaghetti squash in a warmed soup plate or pasta bowl.
  2. Ladle desired amount of sauce over the squash.
  3. Shred cheese over the top of the sauce.
  4. Sprinkle with minced parsley.
  5. Serves 4.

Ingredients:

24 thin Asparagus Spears
1 Green Bell Pepper, seeded and quartered
1 Yellow Bell Pepper, seeded and quartered
1 Red Bell Pepper, seeded and quartered
4 Zucchini, halved lengthwise
1 Small Eggplant, halved lengthwise
4 Leeks, halved lengthwise
1 tablespoon Extra Virgin Olive Oil
6 ounces Smoked Mozzarella Cheese, diced into ½” cubes
Fresh Flat-Leaf Parsley Sprigs, for garnish

Preparation:

1. Spray grill basket or grate with non-stick cooking spray.
2. Preheat grill to medium heat.
3. Brush asparagus spears, bell pepper quarters, zucchini halves, eggplant halves, and leek halves with extra virgin olive oil.
4. Arrange vegetables on grill grate or in grill basket.
5. Grill over direct heat 8 minutes, turning once. Vegetables should be lightly brown.
6. Plate grilled vegetables on 4 individual plates. Divide cheese among plates.
7. Garnish with fresh parsley sprigs.
8. Serve fresh.

Serves 4

1kg hake steaks

1/4 teaspoon mustard

125ml grated cheese

30ml finely chopped red onion

100ml Knorr citrus medley salad dressing

30ml chopped parsley

80ml low fat mayonnaise

pinch of mixed herbs

1 clove garlic, crushed

250ml toasted flaked almonds

salt and pepper to taste

Place fish in an ovenproof dish
Mix mayonnaise, mustard and mixed herbs and spread over the fish
Sprinkle cheese, garlic, onions and almonds over the fish and drizzle with Knorr Salad Dressing
Bake at 220℃ for 20-30 mins
Remove from the oven and garnish with parsley

The rule of thumb here is two tablespoons lemon juice or ½ teaspoon citric acid into each quart of tomatoes, added before you fill your jars.With spring around the corner, farm markets and road side stands are getting ready to offer you a wide variety of organically grown heritage food stuff. Now is the time to start thinking about your foods for the summer and next winter. And canned dinners is a good place as any to begin. Planning dinners so far in advance can seem not only time consuming, but a daunting prospect. The simplest thing to do is to go into your cabinets and see what store-bought goods you already have there. Most of us have spaghetti sauce, pizza sauce, baked beans and BBQ sauce -great for sweet and saucy ribs. And if you have children, canned pastas seems to be the mainstay. There is very little information on canning your own pasta dinners out there. Yet the major companies as well as homesteaders have been doing this for years. The problems occur with what types of pasta you want to can and how much of it you stuff into a jar. You will need only enough to loosely fit into the can/jar, never jam pack it in, or fill it to the brim. As with any home canning you need to leave at least ½ inch of head space. Elbow macaroni, shells or spaghetti noodles are the easiest. It is not recommended that you can pasta because dense foods are harder to heat all the way through during processing. Homemade pastas are simple, and something that everyone should try their hand at. And you can add your own twist, or flavoring, to the noodles, like beet, spinach or Parmesan. Once you have your noodles, forming them into shapes is simple, pack them into the jar, loosely and then add your sauce. Kids love meat ravioli, spaghetti and meatballs, and beef and macaroni. Processing takes the same amount of time as your meats do, 75 minutes for pints and 90 minutes for quarts at 10 pounds pressure, unless you live at an altitude more than 1,000 feet; consult your canning manual for directions for increasing your pressure. Soups, like chicken noodle soup, are a wonderful item to always have on hand. Any of the soups you buy at the store can be modified to your taste, removing or adding certain vegetables, seasoning, and salt . If you have meats in your stock, processing time will take longer then a plain, chicken, meat or vegetable stock. Stews, like roast beef, are the same. And speaking of meats, canning your own meats, poultry, fish and seafood is very rewarding. These items are cooked and stewed in their own juices creating an extra tender meal in a natural stock. Canned Beef strips make an excellent stroganoff. Canned chicken works wonders as a quick chicken with almond rice, while canned salmon makes an irresistible salmon and raisin pie. Which ever dinner tempts your the most, remember that healthy eating requires that you know what is in your food, that you follow all the canning instructions carefully, never eat anything that isn’t sealed properly, and throughly cook all your foods. And most importantly, enjoy.
